When making omelets, it is important to be aware that eggs can be temperamental. Eggs must be purchased fresh, preferably organic, and kept chilled until ready for cooking. If they are not kept cold enough, the whites won’t form properly. The yolks will also break down too quickly and become runny. Your omelets will look strangely colored if this happens. If you plan to cook the eggs right away, it is best to use room temperature eggs.

You can also separate the egg before you add it to the pan. You don't want the white to get mixed with the yolk, as this could cause the egg to curdle.

You could end up burning the bottom half of the egg if the egg is added directly to the heat source. Instead, microwave the egg for 10 seconds before adding it to the pan. The microwave heat is sufficient to cook the egg without overcooking.
