Stories

If you have ever wondered what grandma cooks, then you aren’t the only one. The world is brimming with stories of grandmothers sharing their passion for food and cooking. One such story was told by an English grandmother to the authors of a new cookbook called Grand Dishes. Grandma, 75 years old, claimed she was an "improvising chef." She was a fascinating character. In her early twenties, she and her husband moved to Uganda. They brought iodine capsules to local women, and made peanut stew for hospitalized patients.

Food waste

You have probably seen your grandma shopping a lot if you have been to her home. She'd often buy dented cans and day-old bread just because it was on sale. She didn't have a budget for her family's meals and didn't like trendy storage containers such as those you see in grocery stores. Grandma was an amazing cook and she also had great ideas for leftovers.

How to make a perfect eggroll

Omelets have always been a favourite food to eat for breakfast. How can you make them perfectly? I have tried many different recipes and methods, but none of them work. I have some tips and tricks to help you make delicious, fluffy omelets every single morning.

Before we start making omelets, let's remember that eggs are temperamental. It is important that eggs are fresh from an organic market and kept cool until used. They must be kept cool, otherwise the whites will not form properly and the yolks may become runny. This can make your omelets look bizarrely colored. If you plan to cook the eggs right away, it is best to use room temperature eggs.

Another tip is to separate your egg before adding it into the pan. It is important not to allow any white to mix with the yolk as this could lead to the omelet becoming curdled.

The bottom part of an egg that is added directly to the stovetop might be burned, which could cause a ruined texture in your omelet. Instead, heat the egg in a microwave for 10 seconds and then place it in a pan. The microwave heat cooks the eggs just right without overcooking them.

Next, let's discuss mixing the eggs. When you mix eggs together, you want to beat them well. You can do this by turning the bowl of your mixer upside down. Now shake the bowl vigorously. By doing this, the egg is thoroughly mixed with the air in the bowl.

Now it's time to have fun: pour the milk into the mixture. Fold the eggs in the milk mixture by first pouring half of it into the egg whites. Do not worry if you see streaks of egg; they will disappear when the omelet is flipped.

After you have done folding the eggs, heat the pan on medium heat. The oil will start to smoke. Once the oil has gotten hot, add 1/4 cup of butter and swirl it around so that the entire pan is coated. Carefully open the pan's lid and add salt to the pan. Salt will prevent the omelet sticking to the pan.

Cover the pan once you have formed the omelet. Wait for the top to set. Use a spatula to flip the omelet or turn the pan upside-down. Cook the other side for about a minute. Serve immediately after removing the omelet from its pan.

This recipe is best made with whole milk. However, it can also be used with skimmed milk.
